Shaved Brussels Sprout Salad

I went to Lollapalooza this past weekend and still feel so energetic. Salads are always my go to meal and I love how flexible they are. I always say my mood changes with the music I listen to, but my mood also changes with the salads I eat. I wanted a salad that is light, but filling. The summer should be filled with simple salads, in my opinion. I needed a quick salad because I am getting ready to go back to school this weekend and have to pack up all of stuff. Shaving brussels sprouts gives a nice crunch for a salad and is a little spicy to keep me going.  I never want to overpower the elegance of brussels sprouts, so I kept the salad dressing very light by using just lemon and olive oil.

Ingredients

  • 1 lb. of brussels sprouts
  • 2 tablespoons of Roma tomato
  • 2 tablespoons of Fuji apple
  • 1 tablespoon of shaved almonds
  • 2 tablespoons of olive oil
  • Half of a Meyer lemon
  • Pinch of sea salt
  • Pinch of pepper
  • 1/4 cup of Parmesan Reggiano cheese

Instructions

  1. I began toasting my almonds on the stove
  2. Wash the brussels sprouts and remove the dark leaves
  3. Shave the brussels sprouts using a mandolin
  4. Dice the apple and tomato
  5. Mix the olive oil and the lemon together with a pinch of salt and pepper
  6. Toss all of the ingredients together
  7. Top with almonds and Parmesan Reggiano cheese
